Well, we didn’t “throw another shrimp on the barbie”, but we sure tried some interesting dishes at our recent Boutique BBQ adult cooking class. Sally Lynch led our biggest group yet in making some delicious recipes sure to enliven their next BBQ. Many were sick of serving the same old dishes and needed some inspiration, others were just after a fun night out with the added bonus of learning some new ideas.
We started with Persian Kebabs served on the most enormous skewers I have encountered. You can purchase the skewers at the Persian Bazaar near Chardons Corner on Ipswich Road, Annerley. They smelt divine as they were cooking and tasted even better. Next came some sticky chicken wings that were marinated and then thrown on the grill. These too were a hit and would be great to serve as finger food. For those with a wok attachment on their bbq we did some salt and pepper calamari which was just so simple and incredibly tender. More please!!
The next dish was fish cooked in paper and this was amazing. It was prepared with loads of fresh herbs, shallots, lemon and chilli and then wrapped in baking paper. We then wet newspaper thoroughly and placed the fish on this and wrapped it in the newspaper before placing it in the bbq with the hood down. This style of cooking retains the moisture of the fish and is also really healthy.
To accompany our BBQ dishes we made an Asian Slaw which was absolutely delicious and a home style creamy potato salad. Both of these salads were perfect and showed simplicity is best for this style of eating. I know when we have barbies at home (and not the plastic kind) I can get carried away and try all of these adventurous dishes that are never as popular as the good old standards.
For dessert we had a scrumptious tropical rolled pavlova which is perfect for Queensland living and was a perfect end to a perfect class.
